About the Recipe
Adding some beautiful ripe Californian nectarine to a classic ham and cheese toastie adds a delicious sweet moist touch, taking it to a new level of “comfort food”!

Ingredients
3 nectarines, sliced
½ lemon
1 sprig rosemary
8 slices sourdough bread
Jam or chutney of choice, for spreading
4 thick slices smoked ham
12 slices Brie cheese
Butter and olive oil for cooking
Preparation
1. Preheat oven to warm, about 100°C. Line an oven tray with baking paper.
2. Toss the nectarine with lemon and a few chopped rosemary leaves.
3. Spread the bread with jam or chutney. Top 4 slices with ham, followed by Brie and slices of nectarine. Cover with the other slices of bread.
4. Preheat a thick based pan on the stove, or heat a sandwich maker.
5. Add a teaspoon each of olive oil and butter to pan or, if using a toaster, brush with butter.
6. Place as many sandwiches as will fit in pan, gently pressing down. Cook on medium heat until bread is browned, then turn and cook until other side is browned.
7. Transfer to oven tray and keep warm in oven. repeat for remaining sandwiches.
8. Serve hot from the oven.
